I looked at doing this many years ago, the one thing that stopped me was the part of the center casting has the cut out where the pad goes. One direction the rear circumference of the pad is supported. When flipping the caliper, a lot of that support is gone, and that was enough for me to drop the project. With something like this, I would keep a very close eye on the pad thickness, I can see where a pad could come out, or cock in the bracket.

I actually faced the inside caliper a bit to obviate this problem, (plus I am using thinner discs) , but, yeah, good advice to keep an eye on pad wear!
