But I see a petcock, headlight ears (if straight), kick lever, tail section / light... I will have to check my pile of parts to see what else I could use, there's
always more! What you have there looks like a 76 KH250-A5, the only KH250 sold in the US. It had the drum brake while the KH250-B1, also a 76 model, had a disk but was only available in the UK and other markets (they got KH250s and 400s until 1980, lucky dogs!). The front reflector on the frame was my first clue, the "S" bikes had them on the forks. The paint under the green also supports this, the 76 KH250 came in Super Candy Red. Look at the fuse holder, 3 fuses right? Yep, KH! The 75 build date will likely be late in the year, this throws many off when determining the model year, the best way is to look at the frame / engine numbers:

I wish I was closer, I would consider relieving you of the whole machine, titles can be had with some paperwork and lying - I mean money!
