Thanks for the tip Neville Lush  I received the following reply from Tony of Eldorado Motorcycle Seat Restoration:

Hi Greg. That’s a cool bike and definitely worth doing properly . I only do concours quality work , not cheap , just perfect. Average cost of a seat restoration is about $800 Australian.
Best regards

An internet search only turns up positive comments from satisfied customers. Perhaps expensive but I do want a top notch job and expect I will have to pay for it. I will be pursuing this lead further and plan to post periodic progress reports.

Tony is old school. I don't think he has a web presence , but he sure as hell does good seats. Ask him to send you some pics. When he first started he spent ages MAKING brass moulds to electrically stamp the patterns into the material for the patterns in H2 and waterbottle seats and many others. Some of the stuff I have seen him restore from a piece of crap which I would have tossed out is nothing short of amazing.

Tony was heading out for a vintage motorcycle race but said he would answer some specific questions I had when he returns. He said for now I could check out some seats he currently has listed on eBay. Here is an auction link to a Honda 400 Four seat he recently restored:
