I have the heads off at the moment and they look as if some machining has been made to do away with the head gaskets. Can anyone tell me more about this sort of work on a 500 please. I may be very wrong or just befuddled with age as I didn't remember the heads on my original 500 having a groove machined into them?

Thanks for that, am I correct in thinking that some heads didn't have this cut?

Look at the bottom of the "cut", it ISN'T a cut, but the casting itself. They are there to allow the soft copper head gasket to "rise" intro them, forming a ring of sorts, for better sealing. It does work.
