Like Mraxl said, there are 5 coils. The 4 unwrapped coils are wound and wired series-parallel like the manual shows. But, the 7 o'clock wrapped coil also connects in parallel with the other 4. It's got smaller gauge wire too. Since I haven't seen it explained anywhere, what purpose does this coil serve in the charging system, and why is it different? Just curious.

If you're sure a fifth coil connects to the other four, you may be breaking new ground. If I had one here I'd look, but the only H1 stator I have is an early one.

Its likely whats called a "bucking coil" Bike electrics are very rudimentary, driven by economics and available space. A normal alternator as in a car, or the older H1, the normal way to regulate the voltage was to vary the field current, this reducing the magnetic field. With a perm mag rotor, this is not possible. One way to automatically limit the rise is to have a bucking coil that is wound in such a way as it opposes the generated voltage at higher revs, cancelling in other words. This allows a cheaper electronic regulator as it no longer needs to control such a wildly varying voltage. Perm mag alternators are much cheaper to manufacture. That,d be my take on this. This method was very common with large marine stationary generating equipment before electronic regulation took over.

Thanks for the explanation Starfire, and Jim, I'm 100% sure it is wired parallel with the others. I wasn't certain until I actually started unwinding the coils(couldn't really follow the wires all epoxied together). Fortunately, it's not the coil I found shorted :)
