I have never been able to dial in the oil pump to work properly no matter how hard I try.
It almost always has air bubbles passing to one cylinder which of course concerns me
and the other cylinders seem to get to much oil and are always fouling out the spark plugs.
I'm just an around town guy and don't put large stresses on the engine. I would love to just
eliminate the oil pump and just premix, any thoughts on this.

Which model displacement and year Triple?

H1 1973
I have a little 2 cylinder 2 stroke 100cc Yamaha that I had over oiling problems
and I premix it and I have never had any more problems with it. The
plugs are a nice tan and haven't fouled since I started pre mixing and no
longer blow tons of smoke.
I understand its a much smaller displacement than the H1 and may not
effect it much, but I'm not sure if the H1 would perform as good or if it
would damage the engine. I'm assuming it wouldn't but I thought its best to
reach out and ask people who are pros with these bikes!

For an H2 to run premix, you should take the oil receivers off the crankshaft and verify that you have slotted connecting rods. I don't know if this applies to H1s.

Are you using Stat-O-Seals on the oil pump and oil line fittings? The stock aluminum washers are nothing but trouble. Also, how is the seal at the pump adjusting shaft?

I don't know about oil receivers but 74 & up H1s have slotted rods.

Leave the pump in place, set the oil line check valve release pressures correctly (4.6 PSI of air pressure), check the end cap O ring, per service bulletin on resources page, set the oil pump wheel WITH ENGINE OFF, OFF, OFF, to the last dot on the wheel at wide open throttle, NOT the line on the wheel.

I agree. Premix on the street sucks. Make sure your check valves are setup correctly and adjust the oil pump leaner like he said.
