I'm able to kick start the engine, and the bike has been standing for 4 years so clogged carburetors are likely.

this is getting very hard , as you say one thing then another , please take it to someone that knows about these bikes , as you are chasing your tail at the moment ,

It did idle properly on the outer cylinders in 2017. Not sure why It doesn't now, but the plan is to sort that out first.

As far as the centre cylinder, worst case is bad crank seal(s) and that is very difficult to fix since I don't have the proper tools to do that myself, or know anyone nearby who can.

Bad crank seals won't keep it from idling, but carbs sitting unused for years will. I'm pretty sure that if you take them apart you'll find clogged pilot jets and other problems.

Another thing I'm worried about: we got new fuel pipes between the petcock and carburetors. They did fit perfectly on the petcock but were really tight to get on the carburetors. It took quite some force (pushing by hand) to put them on there. Is there any risk we could have damaged the carburetors in any way by doing that? I'm thinking the inlet clamps getting bent or the plastic seals cracking?

When then engine is properly warmed up, I'm able to hold an appropriate idle rpm manually with the throttle grip.

So could it be that the throttle cables and throttle stop screws are wrongly adjusted?

Idle speed is adjusted with the idle speed screw on each carburetor, not by the throttle cables.

So by turning the throttle adjustment screws at the top of the carburetor?

Throttle cable adjustment Is for carburetor synchronization?

Yes
