Judging from your description you have done everything right except the carb kits. Probably won't run right until kit jets are replaced with genuine Mikuni. That said, you have done a great job!
You asked about value.... it seems the Hagarty values are about double the actual value (US).
Just one guy's opinion

The carb kits are ones I bought from Diablo. Considering what I changed out, it has to be better than the varnished and plugged up parts I removed. I will certainly keep that in mind if I'm having trouble getting it to run well. Tx.

Carb kits from ANYWHERE (except Ivan's) have caused more tuning problems than anything else. Do yourself a favor and clean/use the original jets and needles before you waste time attempting to tune with kit parts.

I'll clean them up and have a good look at them. Tx

Most companies are doing an agreed on value for the insurance. I would say for that bike somewhere in the 5K-8K range.

I would say $6500-$7500.

Hahaha, it seems you are right. So far I've changed a few parts back to the originals but I am have a bitch of a time getting to run properly. I'm also having an issue with the fuel shut off (prime, ON, RES) valve. It's runs better on prime and sputters in the ON position????

There are separate filters on the petcock for prime & run.... maybe it is clogged.
Petcock must be removed to see/clean/replace.

I removed the fuel tank and valve assembly. I cleaned all three filters, ON, Reserve and bowl filter underneath. All were still clean.I also tested the vacuum shut off valve. It worked well and stayed open for a couple of seconds after vacuum was released. With vacuum applied, both ON and RES had great flow thru them.?????

Might not apply here, but my H2B had similar fuel issues, not as bad as that, i had bought a repro fuel cap, and my bike would fall off at higher speeds, longer pulls, the new cap had poor air flow, punched holes that had burrs in the way, a gasket that the hole didn't line up with the cast piece hole, etc. Try dismantling the cap, can do it on the tank still, and deburr and check all labrinth air flows are clear. Made a decent improvement on my bike.
